[Ger-Poland-Volhynia] Occupation: Wirt

Depends on what "wirt" was short for.  "Landwirt" is a farmer.  "Gastwirt" is an innkeeper.

You could think of the root word, "wirt" as being a steward of something.  The prefix then determines what they were a steward of, guests (gastwirt), or the land (landwirt).
