Hello Beth,
just something on the original meaning of the surname PACHOLKE:

[Polish] pachołek = [German] Stiefelknecht, Knecht = [English] boot-jack, skivvy.
The name is wide-spread over all Poland and seems to have its origins in a more eastern region.
